Aloe vera leaves consist of three distinct layers: the outer green rind (epidermis), the middle yellow latex layer containing aloin (a bitter laxative compound), and the inner clear gel fillet containing the therapeutic acemannan and bioactive compounds. Improper filleting mixes the bitter latex with the gel, rendering it unpalatable and potentially causing digestive upset if consumed.

Stand cut leaf upright (cut end down) in a container for 10-15 minutes to drain yellow latex

Lay leaf flat and slice lengthwise along one edge to open the leaf

Use a spoon to scrape the clear gel away from the green rind and yellow latex layer

Transfer clear gel to a clean container, leaving behind any yellow-tinged material

Rinse extracted gel briefly in cool water to remove residual latex
How to Prevent It
Drain the yellow latex by standing cut leaves upright in a container for 10-15 minutes before filleting. This allows gravity to remove the latex layer before gel extraction.
