Fresh aloe vera gel is 99% water containing dissolved polysaccharides, enzymes, and bioactive compounds that degrade rapidly when exposed to air, light, and temperature fluctuations. The acemannan polysaccharides break down within hours at room temperature, and enzymatic oxidation causes browning and loss of therapeutic potency.
How to Fix It

Transfer fresh gel to an airtight glass or BPA-free container immediately

Refrigerate at 2-4°C (35-39°F) for up to 7 days

For longer storage: freeze gel in ice cube trays, then transfer cubes to freezer bags

How to Prevent It
